Beetroot juice works mainly through the nitrate-nitrite-nitric oxide pathway, which can support circulation and exercise recovery. Evidence is better for post-exercise soreness and vascular function than for osteoarthritis itself.
Details
Beetroot juice is a concentrated juice made from red beets and is naturally rich in dietary nitrate, betalains, betaine, folate, and potassium. Its best-studied mechanism is the nitrate-nitrite-nitric oxide pathway, which can improve blood flow and reduce arterial stiffness, with betalains providing additional antioxidant support. For stiffness, the strongest human evidence is not osteoarthritis-specific: randomized trials and systematic reviews suggest beetroot juice may reduce post-exercise muscle soreness and speed recovery of some performance measures after damaging exercise (Clifford et al., 2016; Rojano-Ortega et al., 2022). Separate blood pressure studies also show improved endothelial function and lower arterial stiffness (Kapil et al., 2015). In practice, beetroot juice fits best for exercise-related stiffness, slowed recovery, or poor circulation rather than as a primary joint-first intervention.

Practical Intake
Use 4-8 oz nitrate-rich beetroot juice 2-3 hours before strenuous exercise or 4-8 oz daily during heavy training or recovery blocks. If the earthy taste is difficult, mix with lemon or ginger; refrigerated shots can work when the nitrate content is clearly listed.

Contraindications
Use caution if you have low blood pressure, take nitrate medicines or multiple blood-pressure-lowering drugs, or have a history of calcium oxalate kidney stones. Beetroot can also cause harmless pink or red urine and stools.
