Ingredients:
1 package (about 12 oz) potato gnocchi
1 cup kale, chopped
1/4 cup walnuts
1 clove garlic
2 tablespoons olive oil
Juice and zest of 1 lemon
1/4 cup grated parmesan cheese (optional)
1/4 cup plain Greek yogurt
Preparation
Steps:
Cook gnocchi according to package instructions. Drain and set aside.
In a blender, combine kale, walnuts, garlic, olive oil, lemon juice/zest, and parmesan. Blend until smooth.
Stir in Greek yogurt for creaminess.
Toss gnocchi with pesto sauce. Serve warm.
