Ingredients

Ingredients:

  • 2 boneless, skinless chicken breasts, cubed

  • 1 tablespoon olive oil

  • 2 tablespoons honey

  • 2 tablespoons low-sodium soy sauce

  • 1 tablespoon sesame seeds

  • 1 cup cooked brown or white rice

  • 1 cup snow peas

  • 1 cup shredded carrots

  • 1 cup Brussels sprouts, halved

  • Salt and pepper to taste

Preparation

Steps:

  1. Heat olive oil in a skillet over medium heat. Add chicken, season with salt and pepper, and cook until golden (about 6-8 minutes).

  2. In a small bowl, mix honey, soy sauce, and sesame seeds.

  3. Pour sauce over chicken and cook for 2-3 more minutes until glazed.

  4. Sauté snow peas, carrots, and Brussels sprouts in the same skillet for 5 minutes.

  5. Serve chicken and veggies over rice. Drizzle with extra sauce if desired.
