Ingredients

Ingredients:

  • 1 package (about 12 oz) potato gnocchi

  • 1 cup kale, chopped

  • 1/4 cup walnuts

  • 1 clove garlic

  • 2 tablespoons olive oil

  • Juice and zest of 1 lemon

  • 1/4 cup grated parmesan cheese (optional)

  • 1/4 cup plain Greek yogurt

Preparation

Steps:

  1. Cook gnocchi according to package instructions. Drain and set aside.

  2. In a blender, combine kale, walnuts, garlic, olive oil, lemon juice/zest, and parmesan. Blend until smooth.

  3. Stir in Greek yogurt for creaminess.

  4. Toss gnocchi with pesto sauce. Serve warm.
