2 boneless, skinless chicken breasts, cubed
1 tablespoon olive oil
2 tablespoons honey
2 tablespoons low-sodium soy sauce
1 tablespoon sesame seeds
1 cup cooked brown or white rice
1 cup snow peas
1 cup shredded carrots
1 cup Brussels sprouts, halved
Salt and pepper to taste
Preparation
Steps:
Heat olive oil in a skillet over medium heat. Add chicken, season with salt and pepper, and cook until golden (about 6-8 minutes).
In a small bowl, mix honey, soy sauce, and sesame seeds.
Pour sauce over chicken and cook for 2-3 more minutes until glazed.
Sauté snow peas, carrots, and Brussels sprouts in the same skillet for 5 minutes.
Serve chicken and veggies over rice. Drizzle with extra sauce if desired.
