Ingredients
Ingredients:
2 salmon filets
4 cups baby spinach
2 tomatoes, chopped
1 avocado, diced
1 cucumber, sliced
1/4 cup red onion, chopped
2 tablespoons olive oil
Salt and pepper
Juice of 1 lemon
Preparation
Steps:
Heat olive oil in a pan over medium-high. Season salmon with salt and pepper.
Cook salmon 4-5 minutes per side, until just cooked through.
Arrange spinach, tomatoes, avocado, cucumber, and onion in bowls.
Top with salmon. Drizzle with lemon juice and a little olive oil.
